It was tough during lent to try and find something to eat on Fridays without it always being pasta! I tried these out one of the Fridays and it was super easy and delicious. I had everything that I needed for the recipe in my house already except for the cornmeal. I substituted the cornmeal for flour and it worked just fine. I also had some leftover spinach in my fridge so I added some of that in the mix. I highly recommend these, they were awesome!

I love all four ingredients in this recipe so I knew that I would love these as soon as I saw them. I made my melt with Roasted Red Pepper Hummus instead of classic hummus and I thought it gave the melt a nice flavor. Give it a try!
Oven Baked Pickles
Made to be a MommaI don’t know about you but I love pickles!!! Every November the town over from my school has an annual Pickle Festival. This year I went and I tried Fried Pickles from a food vendor. O.M.G. They were so good.
I recently decided that I wanted to make some but tried to find a way to make them without frying them. I found a great recipe online for baked pickles and they were just as delicious. This recipe was so simple and I felt much better that they were baked and not fried. We dipped them in Chipotle Ranch dressing and that was the icing on the cake. If you like pickles, you have to try these!
Spinach Artichoke Dip
Natasha's KitchenOne of the restaurants in my college town makes an AMAZING spinach artichoke dip. It is to die for. My housemates and I were brainstorming foods that we could make for the Superbowl and this dip was suggested. We wanted to make a healthier version that we wouldn’t feel too guilty about eating. We found one online and gave it a try. It was DELICIOUS! Everyone loved it and we finished the entire thing. The recipe makes a large amount and was more than enough for our party. If you are looking for a guilt free dip, look no further because this one is great.

The website does a great job of coming up with recipes that are made up of ingredients that are typically found in every household. I have made numerous dishes from this website.
